Sugarcane Decaf
Toasted Nuts, Golden Syrup, Lemonade
Our decaf is a washed coffee of Castillo, Caturra and Colombia varieties, grown by farmers in the Huila region of Colombia.
The caffeine is removed using two things and two things only: high mountain spring water and ethyl acetate derived from sugarcane.
The beans are steamed to open their pores, rinsed until the caffeine is carried away, then dried back to 10 to 12 percent moisture and sealed with a neutral natural wax. No fierce heat, no heavy pressure. The natural structure of the coffee stays intact, which is why this cup tastes like the coffee it started as.
Toasted nuts and golden syrup, sweet and rounded, with a lift of lemonade acidity.
